This MasterClass will take place in the Sourdough Institute in Sankt Vith Belgium from 13 November 2024 until 15 November 2024. You will be guided by Karl De Smedt, our sourdough librarian, together with Remy Corbet, Filip De Kimpe and other experts in the field.

Hands-on Learning

Gain hands-on experience with innovative techniques in mixing, kneading, shaping, and baking, while also learning the science of sourdough fermentation. In this course, Remy will concentrate on crafting Scandinavian breads, demonstrating his mastery of sourdough and Norwegian baking methods based on traditional sourdough baking.

Remy will demonstrate how to create five distinct types of Scandinavian breads using Norwegian techniques.

Each type of bread has a unique shaping method, and Remy will demonstrate how to craft them, sharing his secrets for achieving the perfect form for each bread.

He will demonstrate how to utilize sourdough, various types of flour, and seeds to make your sourdough creations as distinctive as possible.
